I hope you all had a great Cinco de Mayo yesterday! It was an especially exciting day for me because I officially hit the 26 week mark! Whoop whoop! I am almost in my third trimester!
We celebrated yesterday with chicken fajitas, and these tasty horchata ice cream sandwiches for dessert!
We have heavy cream in the fridge I wanted to be sure to use, and I thought Cinco de Mayo was the perfect excuse to try making horchata ice cream again! I first tried this a little over a year ago, and it was fine, but I knew I could do better. ;)
Can I just say really quickly how much I love our Cuisinart ice cream maker?!
I don't often use stand-alone kitchen gadgets, but when I do...
it's 'cause they're AWESOME.
This ice cream recipe is the same basic foundation as my toasted almond ice cream and my triple peanut butter ice cream, and you can get the recipe //here//. The super secret simple is the horchata mix that you add in.
Dang, I gave it away.
Following //this// recipe but using a french vanilla cake mix, gave me the cookie for these tasty horchata ice cream sandwiches. Again, don't make the cake mix as per directions on the box, use the recipe in the link above!
To make these more like ice cream sandwiches I rolled the mix out flat between two sheets of parchment paper, then used a rectangle container I had as a cookie cutter once the sheet had completely cooled.
Making them this way, I was able to easily make 6 ice cream sandwiches, with plenty of ice cream leftover as well.
You want to make sure that you make the cookies first and they have a chance to cool, because you'll want to spread the ice cream on before it set up hard in the freezer.
Of course I just had to add the sprinkles for fun, plus my kids are obsessed with sprinkles.
But really, who isn't?
I don't want you to look at this and think, "Great, but I'm never going to go through the trouble of making my own ice cream, and then my own cookies to turn them into ice cream sandwiches." Totally a thought I've had before, but I promise you, these really are super simple and don't take as long as they may look like they take!
Also, I should mention that these are 100% kid and husband approved. :)

They are really good, I can't believe I've had the willpower to only eat one... we still have three in the fridge (although, after tonight we probably won't)!
DeleteI absolutely love this ice cream sandwich idea. We never knew there was any other way to enjoy this treat than the way we make them. I buy the store brand of waffles and heat them in the toaster. Then we slap on a few scoops of ice cream and press tight. That is how we have always enjoyed our ice cream.
