garlic parmesan oven roasted potatoes

We love oven roasted red potatoes in our house. When we're looking for a starchy and carbohydrate loaded side, they're pretty much our go-to choice because we always have red potatoes in our cupboard and there is so much less work involved than mashed potatoes (which, my kids don't really like anyway, I know they're weird). Usually I just toss them in a packet of Lipton Onion Soup Mix with some olive oil and we're good to go, but sometimes necessity is the mother of invention and when I ran out of soup mix awhile ago, this delicious side was born!

 

These garlic Parmesan oven roasted potatoes really can't get much easier, and you probably already have all the spices in your cupboard!


Garlic Parmesan Oven Roasted Potatoes
8-10 red potatoes, washed and quartered
2-4 TBSP Extra Virgin Olive Oil
2 TBSP garlic salt
2 TBSP bread crumbs
2 TBSP Parmesan cheese

If you seem to collect the little packets of Parmesan cheese from your local pizza place like we do, this is the perfect use of them!



Preheat your oven to 400 degrees and toss the potatoes in the olive oil and spices in a 9 x 13" pan. I honestly rarely measure my olive oil when we're roasting red potatoes, so that number is a best estimate. Bake for 40-50 minutes and you have a super simple and savory side for your next barbecue!
